Skewer sun-dried tomatoes, basil and baby bocconcini for surprise mouthfuls of colour and flavour. Try these other irresistible combinations - all work well interlaced with a fragrant fresh basil leaf:
- char-grilled capsicum and cubes of goats' feta cheese
- pitted Kalamata olives and cubes of rare barbequed tuna
- yellow egg tomatoes and pitted Kalamata olives
- semi-dried tomatoes and Australian feta cheese
- char-grilled capsicum and leg ham

5 minute Baba Ganoush
Ingredients:
½ cup sour cream
2 tablespoons tahini
1 clove garlic, crushed
1 tablespoon lemon juice
1 teaspoon smoked paprika*, plus extra to garnish
To Serve:
slices of Lebanese or Turkish bread
Here's How:
- Drain eggplant, retaining 2 teaspoons liquid.
- Place drained eggplant, sour cream, tahini, garlic, lemon juice and paprika in a food processor and process until blended. Place in a bowl; drizzle with retained liquid and sprinkle with extra paprika.
- Serve with Lebanese or Turkish bread.
*smoked paprika is available from select delicatessens and specialty food stores. If unavailable, use sweet paprika.
