Caramelised Onion & Anchovy Tarts
Ingredients:
2 tablespoons extra virgin olive oil
3 medium onions, sliced thinly
1/2 cup (150g) Sandhurst Char-grilled Capsicum Strips
1 t.phpoon harissa
sea salt & freshly ground black pepper
1 sheet ready rolled puff pastry, thawed
8 Sandhurst Anchovies
Here's How:
- Preheat oven to 220oC.
- Heat oil in a large pan; add onion and cook over low heat for about 20 minutes or until golden.
- Stir through capsicum strips, harissa, salt and pepper; cool. Cut pastry into four even squares and place on a lightly oiled oven tray.
- Spread onion mixture evenly over each square leaving a 1cm border.
- Top each tart with two anchovies and bake for about 10 minutes or until pastry is crisp and golden.
- Serve hot or at room temperature.
