Caramelised Onion & Anchovy Tarts

Stylish Stuffing

Caramelised Onion & Anchovy Tarts

Ingredients:

2 tablespoons extra virgin olive oil
3 medium onions, sliced thinly
1/2 cup (150g) Sandhurst Char-grilled Capsicum Strips
1 t.phpoon harissa
sea salt & freshly ground black pepper
1 sheet ready rolled puff pastry, thawed
8 Sandhurst Anchovies


Here's How:

  1. Preheat oven to 220oC.
  2. Heat oil in a large pan; add onion and cook over low heat for about 20 minutes or until golden.
  3. Stir through capsicum strips, harissa, salt and pepper; cool. Cut pastry into four even squares and place on a lightly oiled oven tray.
  4. Spread onion mixture evenly over each square leaving a 1cm border.
  5. Top each tart with two anchovies and bake for about 10 minutes or until pastry is crisp and golden.
  6. Serve hot or at room temperature.
