Skewer sun-dried tomatoes, basil and baby bocconcini for surprise mouthfuls of colour and flavour. Try these other irresistible combinations - all work well interlaced with a fragrant fresh basil leaf:
- char-grilled capsicum and cubes of goats' feta cheese
- pitted Kalamata olives and cubes of rare barbequed tuna
- yellow egg tomatoes and pitted Kalamata olives
- semi-dried tomatoes and Australian feta cheese
- char-grilled capsicum and leg ham

Chorizo, Artichoke & Olive Pizza
Ingredients:
1 large prepared plain pizza base
1 tablespoon pizza sauce
2 Chorizo sausages (about 220g), sliced
100g drained, quartered Sandhurst Artichoke Hearts
100g mozzarella cheese, sliced
½ cup drained Sandhurst Barchetta Kalamata Olives*
olive oil spray
baby spinach, to serve
Here's How:
- Preheat oven to 220ºC.
- Place pizza base on a lightly oiled pizza tray. Spread with pizza sauce. Top with chorizo, artichokes, mozzarella and olives. Spray liberally with olive oil spray.
- Bake 15-20 minutes or until top is golden brown and base is firm. Serve topped with baby spinach.
Serves 4
*Use Sandhurst Sliced Olives or Sandhurst Pitted Kalamata Olives as an alternative.
