Skewer sun-dried tomatoes, basil and baby bocconcini for surprise mouthfuls of colour and flavour.

Tasty 'Taters
Toss pitted Kalamata olives, baby capers, chopped semi-dried or sun-dried tomatoes into potato salads.
Top oven baked potatoes with sour cream, chopped semi-dried tomato and shredded basil.
Add finely chopped Jalapeno chillies to a mashed avocado; mix in a couple of spoonfuls of sour cream. Serve with potato wedges.

A Quick Dip
Place ½ cup of drained char-grilled capsicum, 125g cream cheese and ½ t.phpoon smoked paprika into a food processor; process until smooth. Serve with toasted Turkish bread.

Spread small rounds of sour dough toast with olive spread, top with goats' cheese and sprinkle with baby capers.

Open pita bread and spread with spreadable cream cheese. Top with smoked salmon; sprinkle with a few capers and plenty of ground black pepper. Close
the bread and spray each side with olive oil. Toast in a sandwich press until heated through.
