Stylish Stuffing

Best Beef Burger

Serves 4

Ingredients:

1 tablespoon olive oil
1 large white onion, sliced
1 teaspoon sugar
½ cup drained Sandhurst Red Capsicum Strips
500g minced beef
1½ cups fresh breadcrumbs
1 small red onion, finely chopped
2 cloves garlic, crushed
1 egg, lightly beaten
½ teaspoon salt
non-stick cooking spray
4 cheese slices (Cheddar or Jarlsberg)
¼ cup quality mayonnaise
1 tablespoon Dijon-style mustard
4 hamburger rolls
1 butter lettuce, outer leaves removed
2 vine ripened tomatoes, sliced


Here's How:

  1. Heat oil in a frypan over a medium heat. Add sliced onion; reduce heat and cook, stirring occasionally for 20 minutes or until lightly golden. Add sugar and cook stirring for 3 minutes longer. Stir in capsicum, then turn off heat.
  2. Meanwhile, place beef, breadcrumbs, red onion, garlic, egg and salt in a large bowl and use hands to combine; then form into four 2cm thick burgers. Spray a cast-iron grill or barbeque plate liberally with non-stick cooking spray and heat to medium-hot. Cook burgers for 5 minutes, then turn and top with cheese. Continue cooking 4 minutes for medium or to your liking.
  3. Combine mayonnaise and mustard.
  4. Lightly toast inside of rolls. Spread base of each roll with mustard mayonnaise, then top with lettuce, tomato, beef burger and capsicum mixture. Serve with top of roll.
