Eggplant & Chilli Linguine
Serves 4
Ingredients:
375g linguine
1 cup (200g) Sandhurst Char-grilled Eggplant Strips
1 cup Italian parsley, chopped
2 long green chillies, finely chopped
½ cup grated parmesan
2 cloves garlic, crushed
2 tablespoons extra virgin olive oil
sea salt
extra grated parmesan to serve
Here's How:
- Cook linguine in salted boiling water until just tender; drain reserving ¼ cup of the cooking water.
- Meanwhile, place Char-grilled Eggplant Strips, parsley, chilli, parmesan, garlic and oil in a large serving bowl.
- Add linguine and toss ingredients together adding enough of the reserved cooking water to moisten pasta.
- Season with salt and serve with extra grated parmesan.
