- Toss blanched green beans, cherry tomatoes, pitted Kalamata olives and sliced semi-dried tomatoes. Dress with balsamic dressing and sprinkle with chopped parsley.

Cheese Filled Pepper, Trout & Risoni Salad
Serves 4
Ingredients:
8 (150g) Sandhurst Cheese Filled Peppers
375g risoni
1/4 cup whole egg mayonnaise
¼ cup lemon juice
200g piece smoked trout, flaked
200g snow peas, sliced
½ cup mint leaves, torn
sea salt & freshly ground black pepper
Here's How:
- Slice peppers thickly using a small serrated knife.
- Cook risoni in salted boiling water until just tender; drain and rinse under running water until cold. Whisk mayonnaise and juice together in large bowl.
- Add risoni, trout, snow peas, mint and peppers; gently toss to combine.
- Season with salt and pepper.
