Salmon and Cream Cheese Melt
  • Open pita bread and spread with spreadable cream cheese. Top with smoked salmon; sprinkle with a few capers and plenty of ground black pepper. Close the bread and spray each side with olive oil. Toast in a sandwich press until heated through.

Chicken & Gruyere Focaccia

Serves 4

Ingredients:

4 focaccia rounds
1/3 cup Sandhurst Pesto
60g baby spinach leaves
1/3 cup (100g) Sandhurst Sun-dried Tomato Strips
1/3 cup (100g) Sandhurst Char-grilled Capsicum Strips
2 cups shredded barbecue chicken
1 cup grated gruyere cheese


Here's How:

  1. Cut focaccia rounds in half horizontally and spread evenly with pesto.
  2. Sandwich spinach leaves, sun-dried tomato strips, char-grilled capsicum strips, chicken and cheese between halves.
  3. Toast in sandwich press until cheese is melted. Serve immediately.


Use sliced regular Sandhurst Sun-dried Tomatoes and Char-grilled Capsicums as an alternative.
