Spicy Chicken and Avocado Wraps
Serves 4
Ingredients:
1 avocado, mashed
¼ cup sour cream
1 tablespoon chopped Sandhurst Jalapeno chillies
1 t.phpoon lime juice
350g chicken breast strips
2 t.phpoons Portuguese chicken seasoning
4 lavosh bread wraps (or other flat bread suitable for wrapping)
½ cup Sandhurst char-grilled capsicum
1 cup shredded cos lettuce
Here's How:
- Combine avocado, sour cream, chillies and lime juice. Set aside.
- Rub chicken with Portuguese seasoning. Spray a cast iron grill or barbeque plate with non-stick cooking spray. Heat to medium hot and cook chicken two minutes each side or until cooked.
- Lay wraps out on a work bench. Spread with avocado mixture, then top with capsicum, chicken and lettuce. Roll up firmly.
