Skewer sun-dried tomatoes, basil and baby bocconcini for surprise mouthfuls of colour and flavour. Try these other irresistible combinations - all work well interlaced with a fragrant fresh basil leaf:
- char-grilled capsicum and cubes of goats' feta cheese
- pitted Kalamata olives and cubes of rare barbequed tuna
- yellow egg tomatoes and pitted Kalamata olives
- semi-dried tomatoes and Australian feta cheese
- char-grilled capsicum and leg ham

Zucchini, Caramelised Onion & Feta Pizza
Ingredients:
1 large prepared plain pizza base
2 tablespoons Sandhurst Olive Pate
¼ cup olive oil
2 large onions, finely chopped
1 tablespoon sugar
3 teaspoons fresh thyme
200g zucchini, thinly sliced
120g goats feta, crumbled
Here's How:
- Preheat oven to 220ºC.
- Place pizza base on a lightly oiled tray. Spread with olive pate.
- Heat 1 tablespoon olive oil in a medium frypan, over a medium heat. Add onions; reduce heat and cook, stirring occasionally, for 20 minutes or until golden. Add sugar and 2 teaspoons thyme; continue cooking, stirring for 3 minutes. Spread over pizza. Top with zucchini and feta. Drizzle remaining oil over pizza and sprinkle with remaining thyme.
- Bake 20 minutes or until base is firm.
Serves 4
